Annual Buffalo Wings

  2             pounds  chicken wings -- jointed
  1             cup  butter -- melted
  3/4       cup  Hot sauce -- see note

Discard wing tips or save for stock -- or, if you're me, buy pre-jointed
chicken wings.  Preheat oil in deep fryer to 365 degrees.

Make sure chicken wings are completely dry, and fry in the preheated oil
for 12 minutes.  Drain wings.

Blend hot sauce and melted butter.  Toss wings in hot sauce to coat and
serve immediately.

NOTES : The hot sauce should be a Louisiana-stype hot sauce like Frank's,
        not something more concentrated like Tabasco.  Or if you're me,
        you'll use Hooter's wing sauce, avaiable at grocery stores, zero
        carbs.  Both taste lovely, but I think the Hooters sauce sticks
        better.
       
        By the way, I eat these a lot more than once a year.  "Annual" is
        a mnemonic to help me remember the deep fryer setting and how long
        to cook it.
