Anne's Devilishly Crabby Eggs

  12                    eggs, hard-boiled -- peeled
     1/4           cup  mayonnaise
  1           teaspoon  paprika
     1/4      teaspoon  mustard powder
     1/2      teaspoon  Old Bay Seafood seasoning
  6             ounces  lump crabmeat -- flaked

Cut the eggs in half lengthwise and remove the yolks.  Mash yolks with
mayo and seasonings to blend thoroughly.  Fold in crabmeat.

Spoon yolk mixture evenly between egg halves.  Chill at least one hour
before eating.

        Anne's Devilishly Herb-y Eggs -- Omit mustard, Old Bay and
        crabmeat.  Substitute 1/4c fresh minced chives, 2t dill and 1/4t
        cayenne pepper.
       
        Anne's Devilishly Cajun Eggs -- Omit mustard, Old Bay and
        crabmeat.  Substitute 1/4c minced green scallions (green part
        only), 1/2t minced garlic, and 1/2t Cajun seasoning.
       
        Anne's Devilishly Northwestern Eggs -- Omit all ingredients but
        eggs and Old Bay.  Substitute 1/4c cream cheese, softened, 3T
        chives, minced, and 6 ounces hot-smoked salmon, flaked.
       
        Anne's Devilishly Curried Eggs -- omit Old Bay and crabmeat.
        Substitute 1/4c minced scallions (green part only), 1/4c minced
        cooked chicken, and 1t curry powder.
