Beer-Braised Beef with Onions and Sour Cream

  4             strips  bacon -- diced
  2        tablespoons  salt
  1         tablespoon  pepper
  1         tablespoon  ground allspice
  3             pounds  beef -- cut in 1" cubes
  1              large  onion -- diced
  1 1/2           cups  light beer
  4               cups  beef stock
     1/4           cup  dijon mustard
  1                cup  sour cream
     1/4           cup  green onion -- sliced

In a large, heavy saucepan over medium heat, cook bacon until browned,
7-10 minutes.

Meanwhile, toss beef cubes with salt, white pepper and allspice.  Brown
beef in the bacon drippings for 12-15 minutes, stirring to prevent from
sticking.  Add onions and cook until onions are translucent, 5-7 minutes
longer.  Stir in stout, beef stock and mustard and bring to a simmer.
Reduce heat to medium and skim fat from the mixture, stirring occasionally
to prevent scorching.  Add salt and pepper.  Cover and cook 2-3 hours or
until fork tender.  Serve topped with dollops of sour cream and garnished
with green onions.
