Anne's Infamous Pot Roast

  4             pounds  chuck roast
  2        tablespoons  oil
  2               cups  burgundy
  1                cup  coffee
     1/4           cup  worcestershire sauce
  4                     bay leaves
  1              sprig  fresh rosemary -- or 1t dried
  1           teaspoon  black peppercorns
                        Thickenthin

Preheat the oven to 325.  In a dutch oven, heat the oil and sear the roast
on all sides. 

Add remaining ingredients except for Thickenthin and place the roast,
tightly covered, in the oven.  Cook for approximately one hour per pound,
or until tender.

Remove roast from pan and strain pan juices, degreasing if possible.  Salt
to taste.  Make a strong-flavored gravy using the Thickenthin and pour
over the roast at serving.

NOTES : I don't recommend cooking vegetables in the same pan as this pot
        roast because the gravy is rather strong.  However, if you roast
        vegetables in the oven, pour a little of the pan juice (before
        thickening) over them and then briefly broil the vegetables, the
        gravy will give them a nice glaze.
       
        If you wish, you can replace some of the burgundy with beef stock,
        but the gravy won't have the same interesting flavor.
