Satan's Beef Stroganoff

  1             medium  onion -- chopped
  2             cloves  garlic -- minced
  2        tablespoons  butter
  1 1/2         pounds  beef eye of round
  1                cup  beef broth
  2        tablespoons  tomato paste
  2        tablespoons  fresh horseradish
  1         tablespoon  pepper
  2          teaspoons  dry mustard
     1/2      teaspoon  cayenne
  1                cup  sour cream

  2                     jalapeno peppers -- minced

Saute the onion and garlic in margarine until lightly browned, then
remove.  Cut beef in thin strips, add to skillet and sear so that they
are browned on the outside but rare inside.  Remove and keep warm.

Add broth, tomato paste, horseradish, black pepper, mustard, and cayenne
to skillet together with onions and garlic and mix well.  Bring to a boil,
reduce heat and simmer for 15 minutes or until thickened.  Add beef back
to sauce.

Stir some of the sauce into sour cream before adding to skillet.  Heat
over low heat, stirring constantly, until blended and hot.  Adjust
seasoning.  Serve with jalapenos, if desired.
