Welsh Rarebit and variations

  3        tablespoons  butter
  3          teaspoons  Thickenthin
     2/3           cup  beer -- See note
  10            ounces  cheddar cheese, shredded
  1           teaspoon  dry mustard
  1           teaspoon  Worcestershire sauce
  3              drops  Tabasco sauce
                       

Melt butter in a heavy skillet and let brown slightly.  Sprinkle
ThickenThin over butter and whisk to dissolve.  Whisk in beer and boil for
3 minutes or until alcohol smell goes away.

Reduce heat to low and add remaining ingredients, whisking.  Cook until
cheese is melted and mixture is hot but NOT bubbling.

Serve hot over toast or vegetables.

NOTES : Beer -- I use Guinness for this recipe.  If you prefer, a light
        beer works fine but will taste a little different.
       
        Carbohydrate count will vary depending on what you serve this
        over.  I use Bread of Life Carb-Lite Bread, 1 net carb per slice.
        Welsh Rarebit can also be served over Atkins rolls, whatever
        low-carb bread you like, vegetables, fried eggs, you name it.
       
        Variation:  Serve over toast with two slices of crispy bacon on
        top of the cheese.
        Variation:  Serve over toast with a slice of ham under the cheese.
        Variation:  Fry a slice of ham.  Lay fried or scrambled eggs over
        the ham, then spoon cheese sauce over it.
        Variation:  Serve over a hamburger patty with or without bacon.
