Cajun Chicken Pasta

  1              pound  boneless skinless chicken breast
     1/3           cup  blackening seasoning
  1              stick  butter
  3        tablespoons  peanut oil
  3        tablespoons  tomato paste
  2               cups  heavy whipping cream
  4             cloves  garlic -- minced
  1              bunch  green onions

Coat chicken breasts with blackening seasoning and pound lightly with a meat
mallet or bottom of glass until the chicken is a uniform thinness.

Heat peanut oil and butter together in a frying pan until extremely hot.
Add chicken and sear well.  Chicken should be slightly firm but need not
cook completely.  Remove chicken from pan and slice on the diagonal, setting
aside.

Add tomato paste to pan juices and fry over high heat for 1 minute.  Add
whipping cream and remove from heat, stirring to deglaze pan and blend
contents.  Lower heat to medium and return skillet to heat, adding garlic.

Simmer sauce until it thickens, 5-10 minutes, stirring frequently.  Taste to
adjust seasonings, adding salt and/or cayenne pepper to taste.

Return chicken to pan and simmer for 5 minutes.  Add green onions to pan
just before serving.
