Chicken, Broccoli and Cheddar Casserole

  1              large  rotisserie chicken -- skinned and boned
     1/2           box  Dreamfields elbow macaroni
  2           packages  frozen chopped broccoli -- thawed
  4               cups  sharp cheddar cheese -- shredded
  2           packages  cream cheese -- softened
  1              stick  butter -- softened
  2        tablespoons  salt
  2        tablespoons  freshly ground black pepper
  1                cup  heavy whipping cream

Pull the chicken into bite-sized chunks.  Set aside.  Preheat oven to 350.

Cook the pasta for exactly 7 minutes.  Pasta will be underdone.

Combine cream cheese, whipping cream, butter, salt, pepper, and all but a
handful of the shredded cheddar cheese.  Add chicken, broccoli and elbow
macaroni and place in a large casserole dish.  Stir to combine thoroughly.
Sprinkle remaining cheese over top and cover casserole dish.

Bake at 350 for 45 minutes.  Serve hot.

NOTES : This makes one almighty big casserole, but I based it around the
amount of meat on one large rotisserie chicken (such as the ones sold at
Sam's Club).  i also tried to minimize the Dreamfields pasta while still
giving that nice "casserole-y" feel.  If you really wanted to be decadent,
you could add a sprinkling of crisp crumbled bacon over the top, but it's
pretty rich as is.
