Greek Chicken Casserole

  3               cups  chopped cooked chicken
  1            package  frozen spinach -- thawed and drained
  8             ounces  feta cheese -- crumbled
  6        extra large  eggs
     1/2           cup  heavy whipping cream
  1           teaspoon  salt

Place chicken, spinach and feta cheese in a small casserole dish.  Toss to
combine.

Whisk eggs and cream together until fluffy.  Stir in salt.  Pour egg
mixture over chicken mixture.

Bake in preheated 350 degree oven for one hour, or until center of
casserole is set.  Serve hot.

NOTES : This is a great way to use up leftover cooked chicken.  Make sure
        the spinach is thoroughly drained -- squeeze dry, if possible.
        More cheese would not go amiss, either.
