Anne's Frittata Du Jour

  6                     Eggs
  1 1/2           cups  heavy whipping cream
  2               cups  Asiago Cheese -- shredded
  1            package  frozen spinach -- thawed and drained
  6             pieces  cooked bacon -- crumbled
  1                can  crab meat
     1/2         stick  butter

Preheat oven to 350.  Melt butter in a LARGE nonstick skillet over
medium-high heat.

Beat eggs with cream until thoroughly blended.  Add cheese, spinach, bacon
and crab meat and stir until ingredients are thoroughly distributed.

Pour mixture into sizzling skillet and immediately move skillet to preheated
oven.

Bake until just set, 30-40 minutes.

NOTES : You can add any kind of meats, veggies, seafood, cheese, etc. to the
basic egg/cream mixture.  This is a great way to use up leftovers and takes
almost no time to prepare.

Be careful reheating; you don't want to overcook your eggs.

The hot pan/butter step makes a nice "crust" on the bottom of the frittata.
