Anne's Ham and Cheese Quiche

  1                cup  ground almonds
  4        tablespoons  butter -- melted
  4              large  eggs
  2               cups  heavy cream
  1 1/2           cups  ham, chopped
  1 1/2           cups  grated cheddar cheese
  1                cup  chopped green onions

Preheat oven to 425 degrees.

Mix ground almonds and melted butter; press into bottom of two pie pans to
form a very thin crust.  Put crusts in oven for 5 minutes.

Sprinkle ham, cheese and green onions over pie crusts.  Whisk together
eggs and cream, blending thoroughly.  Pour into pie crusts.

Bake quiches at 425 for 15 minutes; then decrease heat to 300 degrees and
bake for another 30 minutes, watching carefully, or until a tester
inserted in the center comes out clean.  Let quiches sit 5 minutes before
slicing.

NOTES : I prefer to use Smithfield ham, very finely chopped, and
        good-quality cheddar, like Black Diamond, or gruyere, for this
recipe.
