Barbecued Ribs

  2              racks  baby back pork ribs
  1              large  onion -- cut in half
  12            ounces  beer or stout
  1         tablespoon  cajun seasoning
  3               cups  low or zero-carb barbecue sauce

Place ribs in stockpot.  Add onion and beer and enough water to barely
cover ribs.  Bring water to a boil then immediately lower temperature;
simmer ribs for 1 1/2 hours or until just becoming tender.

Remove ribs from water and drain thoroughly.  Lay ribs out flat and
sprinkle with cajun seasoning; pat seasoning into ribs.  Let ribs set
until cooled and thoroughly dried.

Place ribs on very hot grill and baste repeatedly with barbecue sauce,
nicely charring each layer.  Serve hot with lots of napkins.

Nutrition count varies depending on the beer and barbecue sauce you use.  If
you use a zero-carb barbecue sauce, the effective carb count is negligible.
