Pan-Fried Pork Chops

pork center loin chops -- butterflied

cup Carbquik

Eggs
1 tablespoon garlic
salt
1/2 teaspoon
cayenne

cup peanut oil
Combine Carbquik, garlic salt and cayenne pepper in shallow dish. Put eggs
in bowl and beat lightly. Pat pork chops dry.
Dip pork chops in egg, then in Carbquik mix, turning to coat thoroughly.
Set aside.
Heat oil in heavy-bottomed skillet over medium-high heat. Place pork chops
in oil. Cook until breading is nicely browned on both sides and pork chops
reach an internal temperature of 140, about 5 minutes per side.

NOTES : Next time I will use 50/50 Carbquik and either nut meal or parmesan
cheese to make a more interesting texture. Other bake mix could be
substituted for Carbquik.
