Melt-In-Your-Mouth Pork Shoulder Roast

Pork shoulder roast, bone in -- Any size
Preheat oven to 275. Place pork roast in oven bag in a baking pan, close
bag, and pierce bag slightly to let out steam.
Place pork roast in oven and leave for 45 minutes per pound.
Remove pork from oven bag (save pan juices if desired for making sauce).
If
glazing the roast, turn the oven up to 400 degrees. Slash the fat with a
sharp knife, being careful not to cut into the meat, and apply glaze over
the roast. Return roast to oven for 30 minutes to brown the glaze.

Serving Ideas : This rich roast is marvelous served with rather bitter
greens, such as turnip or collards.
NOTES : Variations on a theme:
Marinating the pork overnight adds flavor. Beer alone, beer and jerk
marinade, diet cola, italian dressing, whatever you like to marinate it in.
Sauces: This pork is very tender and rich, so be cautious with rich creamy
sauces.
Glazes: Sugar free maple syrup mixed with brown mustard makes a lovely
glaze. So does any sugar free jelly or jam. Barbecue sauce is, of
course,
obvious for this recipe.
Save the bone and pan drippings for pork stock!!
