Tom Yum Gai (Thai Shrimp Soup)

     3/4         pound  shrimp -- peeled and deveined
  4               cups  chicken stock
  1              stalk  fresh lemongrass -- sliced
  3        tablespoons  fish sauce
     1/4           cup  lime juice
  3                     green onion -- sliced
  2        tablespoons  cilantro -- chopped
  3                     chili peppers -- seeded and sliced

Bring stock to a boil.  Add lemongrass.  Reduce heat to medium and add
shrimp.  Cook for about 3 minutes and add fish sauce and lime juice.  Add
vegetables just at the end of cooking and serve.

I can't get an effective carbohydrate count on this because of some of the
exotic ingredients, but it should be under 7 carbs/serving.
