Simple Fried Cabbage

1/2 stick butter

head cabbage
1/2 teaspoon salt
1 teaspoon pepper
Cut cabbage in quarters and remove core. Cut in 1-inch-thick slices, turn
90 degrees and cut in 1-inch-thick slices again.
Melt butter in heavy-bottomed skillet over high heat until sizzling. Add
cabbage and toss to coat evenly with butter. Fry cabbage until some pieces
are browned slightly, but still crunchy. Add salt and pepper.
Cover cabbage and remove from heat. Let steam about 15 minutes, then serve
hot.
