Grilled Zucchini "Fillets"

small zucchini squash

cup olive oil
2 teaspoons
minced garlic
1/2 teaspoon salt
Preheat grill to high. While grill is heating, cut ends off zucchini and
slice lengthwise into 1/4-inch-thick slices (the trick to this is to cut
the first slice off the bottom, so the zucchini will sit flat for
slicing).
Combine oil, garlic and salt in a flat-bottomed bowl or pan (or use a
plastic bag) and toss zucchini fillets in dressing (for a stronger flavor,
this step may be done in advance and the zucchini marinated in the
dressing).
Place zucchini fillets on a very hot grill and grill briefly on each side.
Do NOT cook until soft, leave crisp!
