Cauliflower "Rice" Pilaf

  1               head  cauliflower
  1              stick  butter
     1/4           cup  onion -- minced
     1/3           cup  pine nuts
  1           teaspoon  curry powder -- OR garam masala
  1                     chicken bouillon cube -- crushed

Make the cauliflower rice:  Trim cauliflower and cut into chunks.  Run
through shredder disc of food processor.  Place in bowl and microwave for 15
minutes or until tender.  Dump into sieve and press out as much liquid as
possible using a bowl inside the sieve to press the cauliflower between bowl
and sieve.

In a heavy skillet, melt the butter and add the onion.  Sauté over
medium-high heat until onion is golden.

Add pine nuts and sauté until golden.  Add curry powder and crushed bouillon
cube and sauté until thoroughly blended.

Toss in cauliflower "rice" and fluff, stirring in nuts, onions and spices
until evenly distributed.  The "rice" will completely absorb the liquid and
the pilaf will be fluffy.
